Megan's Meat Loaf

Serves 4-6
Ingredients:

2 lbs ground beef
a couple shakes of salt
a little bit of pepper
1 cup chopped onion
2 eggs, lightly beaten
a big squirt of ketchup
1 cup oats (quick cooking or normal)

Topping:
1/3 cup ketchup
2 tbl brown sugar
1 tbl mustard

Directions:
Mix all ingredients well and place in a baking dish. Shape into a loaf. Spread the topping over the meatloaf. Bake for 1hr 15 min at 375 degrees.

Chicken Corn Chowder

Serves 6
Ingredients:
1 med onion finely chopped
2 cloves garlic crushed
2 teaspoons thyme
1/2 tsp salt
1/4 tsp black or white pepper
3 tbl butter
3 tbl flour
1 1/2 c chicken broth
1 c water
2 medium potatoes, peeled and cubed
1 bay leaf
1 15 oz can corn, drained
1 red pepper, diced
1 1/2 c milk
1 c half and half
As much cooked chicken as your heart desires
1/2 c fresh parsley
3 slices bacon, cooked and crumbled

In a large soup pot over medium heat cook the bacon, then remove and set aside. In the same pot saute' the onions, garlic, and spices until translucent. Sprinkle with the flour and stir well. Add the chicken broth, water, potatoes, and bay leaf and cook for 15 minutes over medium to low heat, stirring occasionally. Add the corn, red pepper, milk, half and half and chicken and simmer for another 15 min or until the potatoes are soft. Add the parsley and bacon before serving. Enjoy!

Pumpkin Roll

Ingredients:
3 eggs
1 C Sugar
2/3 C pumpkin
1 tsp lemon juice
3/4 c flour
1 tsp baking powder
2 tsp Cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1 c chopped walnuts

Cream Cheese Filling Ingredients:
1 1/2 c powdered sugar
8 oz cream cheese
4 tbs butter
1 tsp vanilla (or more)

Directions:
1) Beat eggs on high for 5 minutes
2) Gradually beat in sugar to eggs
3) Stir in pumpkin and lemon juice
4) Add flour and all other dry ingredients
5) Grease and flour cookie sheet (10X15) deep enough for batter.
6) Spread batter in cookie sheet and top with nuts.
7) Bake at 375 degrees for about 10 minutes (do not over bake)!
8) place clean towel on counter and sprinkle with powdered sugar.
9) flip baked roll onto towel and remove pan
10) roll up batter with towel in it and let completely cool.
11) unroll, remove towel and spread with cream cheese filling.
12) roll back up and place in refrigerator until ready to serve.

Chicken Tortilla Soup

Serves 2
Ingredients:
1 can of CHICKEN BROTH
1 can of MEXICAN STEWED TOMATOES
Approx. 1 cup of cooked CHICKEN
Half of a sauteed ONION (optional)
1 can of drained BLACK BEANS (optional)
1/2 cup of CORN (optional)
Some chopped CILANTRO (optional)
HOT SAUCE to taste
TORTILLA CHIPS
shredded CHEESE
chopped AVOCADO

Throw everything but chips, cheese and avocado into a soup pot and simmer.  Add chips, cheese and avocado to individual bowls.  I sometimes add more broth to stretch it a little.
