Chicken Corn Chowder

Serves 6
Ingredients:
1 med onion finely chopped
2 cloves garlic crushed
2 teaspoons thyme
1/2 tsp salt
1/4 tsp black or white pepper
3 tbl butter
3 tbl flour
1 1/2 c chicken broth
1 c water
2 medium potatoes, peeled and cubed
1 bay leaf
1 15 oz can corn, drained
1 red pepper, diced
1 1/2 c milk
1 c half and half
As much cooked chicken as your heart desires
1/2 c fresh parsley
3 slices bacon, cooked and crumbled

In a large soup pot over medium heat cook the bacon, then remove and set aside. In the same pot saute' the onions, garlic, and spices until translucent. Sprinkle with the flour and stir well. Add the chicken broth, water, potatoes, and bay leaf and cook for 15 minutes over medium to low heat, stirring occasionally. Add the corn, red pepper, milk, half and half and chicken and simmer for another 15 min or until the potatoes are soft. Add the parsley and bacon before serving. Enjoy!
